About Earnest

Earnest is a new chapter of my story.

Hi, I'm Filip. We may have met at the Radniční restaurant by the main square, which I ran for sixteen years. Or perhaps we know each other from a catering job, a wedding or a corporate event. And if not, it's a pleasure to meet you.

Earnest was born from a desire to build a place in Kroměříž with its own character, energy and ambition. A place where you can start the morning with coffee and breakfast, eat well during the day, sit down with a glass of wine in the evening, and where desserts, catering, events and other gastronomic projects come to life as well.

The basic idea is simple: the guest should feel welcome. Good food, coffee, wine or dessert matter, but they aren't enough on their own. Service, atmosphere and the will to accommodate whenever possible are just as important.

How it all began

I've been working in gastronomy since I was fifteen. I gained my first experience at hotel school, later through internships, courses and stays abroad. An important chapter for me was working at the Four Seasons Prague at a time when the Allegro restaurant, under the leadership of Andrea Accordi, became the first in the Czech Republic to receive a Michelin star. It was there that I fully realised how big a role detail, professional service and the overall guest experience play.

After my studies, life brought me to Kroměříž. Together with my wife Štěpánka, and with the support of her family, we opened Radniční sklípek in 2010. We took over a business in a great location, but with a bad reputation and outdated equipment. The beginnings weren't easy, and the first winter was really tough. Gradually, however, we managed to win the guests' trust, invest in the operation, and build a business that found its place in the city.

From the start, we wanted to go our own way. We supported small breweries, invested in our own beer technology, and tried to do things honestly, without shortcuts. Gradually my sister Eva joined me, along with my long-time friend and gastro partner Jirka, and a number of other people, without whom this whole story would never have come to be.

But not everything was easy. Around 2019, a staffing crisis hit, along with exhaustion and personal burnout. There was a period when I seriously considered selling the restaurant. In the end, though, thanks to the support of my family, colleagues and guests, I found a new appetite to carry on. Radniční sklípek turned into Radniční restaurace & pivotéka, and a new chapter of our business began.

Gradually, we expanded our activities to include catering, weddings, corporate events and other operations. Every project brought new experience, successes and lessons. It's thanks to them that I know today that good gastronomy isn't just about food and drink, but above all about people, relationships and an environment that guests enjoy returning to.

Earnest is not a relocated Radniční, nor a copy of what we did before. It's a new project built on the experience of recent years, a new team, and the opportunity to combine a café, a restaurant, a pastry shop, catering and space for further ideas all in one place.

After more than sixteen years in gastronomy, I still have the same motivation as at the beginning – to do things honestly, to keep moving forward, and to create places where people feel good. And that's exactly what Earnest is about.

Why Earnest

The name Earnest emerged from several layers of meaning. It refers to the theatrical setting of the House of Culture, and to Oscar Wilde and his play The Importance of Being Earnest. At the same time, we like the meaning of the word "earnest" itself – sincere, honest, genuine. Earnest is meant to be exactly that: genuine, personal and without unnecessary pretence.

Earnest doesn't rest on one person. It's made up of cooks, pastry chefs, baristas, waitstaff, people from the cold kitchen, catering and operations, as well as part-time helpers who assist with bigger events.

Most of the team joined us only once Earnest was founded. That makes us all the happier that we managed to bring together people who want to give guests a great experience – from the first coffee, through lunch and dessert, all the way to a big wedding or corporate event.

Our suppliers and partners

Ingredients aren't anonymous line items on an order form for us. We source our meat from the Rampuše and Rudimov farms, or from the Němec family. We get eggs from Mr. Albert in Bařice, bread from Pekařství Kolář in Kvasice, our coffee is roasted by Pražírna kávy Kroměříž, our beer is brewed by the Kroměříž 1. selský pivovárek, and we choose wine together with Magnum Wines.

We're gradually building a network of people and producers we know personally, whose work shows in what the guest gets on their plate, in their cup, or in their glass.

Where we're headed

We don't want to be just another restaurant in town. We want to create a place worth coming to Kroměříž for.

We see Earnest as a long-term project. Not as a finished concept, but as a path we want to build every day – in the kitchen, the café, the pastry shop, catering and service alike.
